Eggplant With Prawns Sauce
Hari ni.. datang angin rajin nak berkongsi resepi.. so layan ajelah.. resepi sempoi aje ni.. masak dah lama.. masa ni kamera dapur aku masih bernyawa.. haa.. punyalah lama gambor ni terperap..
Resepi ni.. aku ikut dari majalah Yummy Yummy Hawker's Fair oleh Chef Phang Fah. Majalah masakan ni.. bukan majalah melayu.. tapi majalah cina tau.. aku pinjam dari rakan opis.. mana yg berkenan aku photocopy.. hehehe.. sesaja jer nak mencuba masakan cina.. tapi nama masakan ni kalau ikut majalah.. Chef Phang letak nama Eggplant with Chilli Prawns.. tapi nama jer ada cili.. tapi tak pedas langsung.. tu yang aku tukar ke nama di atas.. sorry yer chef.. jangan saman saya yer sebab memandai ubah nama resepi.. sebenarnya.. aku cuma suka cara presentation dlm resepi ni jer.. rasa masakan.. biasa2 aje.. kekekeke.. but anyway.. thanks to chef Phang for the recipe...

INGREDIENTS:
300 gm eggplant
2 cup oil ~ for deep-fry
1 tbsp chopped shallots
2 red chillies, removed seeds and chopped (MaDiHaA hiris jer)
100 gm shelled prawns
1 tbsp chopped spring onion
SEASONING:
1 tbsp light soya sauce (MaDiHaA tambah lg sikit)
1 tbsp oyster sauce (MaDiHaA tambah lg sikit)
Dash of pepper
A bit of Sesame oil
3 tbsp water (MaDiHaA tambah lg sikit)
1 tsp corn flour, mixed with
1 tbsp water, for thickening
METHOD:
1. Cut eggplant into strips and deep-fry until cooked. Dish and drain. Place onto a serving plate.
2. Leave 1 tbsp oil, saute chopped shallots until fragrant. Add in chilli, prawns and stir well. Add in seasoning and stir-fry until well-mixed.
3. Thicken with corn flour water, sprinkle chopped spring onion and stir well. Pour the mixture over fried eggplant dan serve.
